Pan Fried Eggplant

I like to slice my eggplant the long way, looong slices, and pan-fry them slowly with minced garlic and a tiny bit of soy sauce. Might be wierd, but I put a bunch of it on toasted bread and eat it like a sandwich.

Sounds super yummy…Love roasted eggplant on – well, just about anything! 😉 I do a similar idea to eggplant: Slice in thick rounds, salt-n-soak awhile, roast in olive oil till browned on both sides then sprinkle with garlic powder and balsamic vinegar while fresh from oven. Add feta and hummus and I’m in heaven, er- Nirvana! 😉
