Coconut soup for lunch! I went by the recipe for the most part. I had already drank the coconut milk before I decided to make the soup. I was also out of milk, so I used half and half and a whole lot of water. I think I will make it again when another coconut finds its way into my basket.
If you have fennel left and don’t know what to do with it, I have a suggestion. I cut up the remaining half of my bulb, sauteed it in olive oil with some onion and garlic, then browned some ground beef with it and added a jar of spaghetti sauce. I can’t say that I tasted it in the sauce, and the kids didn’t notice it either. They were eating veggies and didn’t even suspect it.
Thanks to Noisy Rabbit, I have not been to the grocery store in over a month. I am actually excited about cooking dinner and finding ways to use what comes in my basket! I made collard greens for the first time ever this week, and I found a great recipe for Brussel sprouts that I love (and I have *never* liked Brussel sprouts!)
