Provençal Kale and Cabbage Gratin

Kale Smoothie

Just made a Kale Smoothie!

Bunch of Kale
1/2 Cup frozen un sweet strawberries
1 Cup Kefir (lowfat)
1 and Half Tbsp jello non sugar non fat white chocolate pudding mix
1 Scoop Vanilla Whey Protein Powder (optional)
Blend all, no ice needed if using frozen strawberries

Ann’s Sesame Kale Salad with Avocado

Ingredients:

2 large bunches of fresh kale, finely chopped ( about 10 cups)

1 ½ ripe, but firm avocados, large dice

1 tbsp toasted sesame seeds

3 tbsp orange juice

Juice of 1 lemon

1 ½ tbsp soy sauce

1 tbsp sesame oil

2 tbsp chopped fresh mint

2 tbsp chopped fresh cilantro

Pack the chopped kale into a large microwave-safe bowl and cover. Place in microwave on high for 45 seconds. Remove and let cool a bit. Add the remaining ingredients and stir gently until thoroughly combined.

Serves 4-6

Kale Dip

Here’s a great recipe for kale!

Kale Dip

1 Tbsp EVOO
1 garlic clove, thinly sliced
3 c. thinly sliced kale leaves
Coarse salt
1 c. low-fat cottage cheese
Pinch red pepper flakes

1 Tbsp. Fresh lemon juice

Heat oil in a pan over medium heat. Add garlic and kale and season with salt. Cook, overed, stirring occassionally, until tender, 3 -4 minutes. Let cool.

Transfer to a food processor. Add cottage cheese and puree until smooth. Season with pepper flakes and lemon juice. Refrigerate for up to 3 days.
