Great idea for Mexican week: Salsa Chicken!
Put frozen, boneless chicken breast in a crock pot and cover with salsa. Heat on high for about 5 hours. Shred the chicken while in the crockpot. You can put the chicken over rice or make burritos with it. Our favorite is to eat it like a taco salad… over lettuce with fresh tomatoes, onions, jalapenos, cilantro, avocados, black beans, sour crean and cheddar cheese. Yummy!
